The difference between Grade A and Grade B Syrups is one of nutritional value and flavor. Grade A comes from the first sap that is taken from the tree---it is very thin, and after it is boiled down, the syrup has a very mild flavor. Grade B comes from the last sap taken from the tree, it is full of minerals and vitamins and is usually darker. It has a stronger flavor.
